Annam's Adai Dosa Mix, also known as Adai Maavu (அடை மாவு), is a traditional South Indian mix of rice and four dals – toor dal, chana dal, urad dal and moong dal – seasoned with red chillies, cumin and perungayam (asafoetida). Unlike regular dosa, adai needs no soaking, grinding or fermenting. Just add water and salt for thick, crispy, golden adai.
Best for: crispy adai dosa served with avial, coconut chutney, jaggery or a dab of butter – an easy breakfast, tiffin or evening snack.
Ingredients: Raw Rice (Pachai Arisi), Parboiled Rice (Puzhungal Arisi), Toor Dal (Thuvaram Paruppu), Bengal Gram Dal (Kadalai Paruppu), Urad Dal (Ulundhu), Moong Dal (Paasi Paruppu), Red Chillies (Milagai Vathal), Perungayam (Asafoetida – contains wheat flour), Cumin Seeds (Seeragam).
