Idli Podi

Annam's Idli Podi, also known as Idli Milagai Podi (இட்லி பொடி), is a traditional South Indian side powder of roasted red chillies, urad dal, chana dal and toor dal, with curry leaves, perungayam and salt – and no garlic. Mix it with gingelly oil or ghee for a spicy, nutty partner to soft idlis and crisp dosas.

Best for: idli, dosa, uthappam and adai with gingelly (nallennai) oil or ghee, or sprinkled over podi idli and podi dosa.

Ingredients: Red Chillies (Milagai Vathal), Urad Dal (Ulundhu), Bengal Gram Dal (Kadalai Paruppu), Toor Dal (Thuvaram Paruppu), Curry Leaves (Karuveppilai), Perungayam (Asafoetida – contains wheat flour), Salt.

How to use

Take 1–2 teaspoons of Annam's Recipes Idli Podi on your plate, make a small well and pour in gingelly oil or melted ghee. Mix and serve with hot idli or dosa. For podi idli, toss mini idlis in ghee and a generous sprinkle of podi.

Storage and shelf life

Best before 6 months from the date of packing. Store in an airtight container in a cool, dry place, away from sunlight, and always use a dry spoon. Kept in an airtight container in the refrigerator, it stays fresh for up to 12 months.

Is this the same as Idli Milagai Podi?
Yes. It is the traditional idli milagai podi, also called gunpowder.

Does it contain garlic?
No.

Does it contain wheat?
It contains perungayam (asafoetida), which contains a small amount of wheat flour. All other ingredients are dals, chillies and curry leaves.

Is salt added?
Yes. Just mix with oil or ghee and serve.

How long does it stay fresh?
6 months from the date of packing, and up to 12 months in an airtight container in the refrigerator.
