Making 24 idlis

Add water to the cooker below the bottom tier and heat until it boils. Oil or line all six plates, pour batter into each mould, then lower the full stand in and cover. Give it 12–15 minutes on medium heat, switch off, wait 2 minutes and lift the whole stand out by its handle.

Looking after it

Soak the plates briefly if batter sticks, then wash with a soft sponge and mild soap. Dry the cooker and stand fully before storing.
